Iconic Oregon bakery prepares to introduce a sustainable brand

Franz Family Bakeries will launch the first new brand in its 102-year-old history Monday.The venture, called Green Earth Baking, will feature three certified organic bread products the company says are wholly sustainable.While organic breads are nothing new, Franz officials say theirs will stand out as the first to detail their sustainable attributes — from regionally sourced wheat and grains to the use of an oxidizer to reduce bakery emissions.
